Fresh lake fish
Lake Bracciano offers a wide variety of fish; eel, “Tinca†Tench, sun perch, carp, traditional perch, Coregone, and latterino.
Fresh local meat from the “Maremmaâ€
The herds of livestock from the Maremma breed are free-range cattle. The local cowboys are responsible for relocation, separation, and the annual spring round up, where the young cattle are divided from the herds and branded. This norm is for recognizing the cattle’s ownership while in free range. Today, this tradition is in the hands of very few young cowboys who are responsible for maintaining this disappearing tradition.
Dairy products
Given that this area is still predominantly agricultural and full of livestock, both cow and sheep, dairy products are in abundance and characteristically part of the daily fare.
Olive oil
Olive trees are one of the most characteristic plants in this rural area and olive oil is one of the oldest and important products of the “Tuscia Romanaâ€.
Produce
Harvesting broccoli rab is a local anguillarian tradition. Originally, broccoli rab was used exclusively for animal forage, but during the First World War it became a necessity to make use of it as a food source. The first consumers were farmers, but soon afterwards, the local folk from anguillara learned to appreciate the flavour and nutritional quality. Tomatoes are also one of the mainstays of the Trevignano Romano vegetable gardens.
